I know what you're thinking: "But four weeks ago you said, ' I will be getting ahead on the blog, get ready for weeks of content coming soon as I'm going to use the free time to write."

And then, I fell off the face of the blogging earth, well after that week I did at least. Oops.

Its been a crazy but exciting month and I'm hoping to be back to regularly scheduled blogging. But for now, please continue to bare with me through the in consistency.

This week...

+ I plan to blog, hopefully more than right now.

+ I plan to not hit snooze more than 1x all week long

+ I plan to celebrate that I am not moving with dinner with the roomies

+ I plan to blog about updates I'm hoping to make around the apartment

+ I plan to make it to the gym, or at least work out, more than 3 times'

+ I plan to finish Harry Potter and the Deathly Hallows

+ I plan to get everything in order for a bridal shower I'm throwing that's coming up

+ I plan to finalize Mr. Bennett's birthday present, and maybe sneak a housewarming one in there, too

+ I plan to procure the perfect mother's day gift for Barb

+ I plan to rededicate myself to my 101 in 1001 days

But you know how plans go...sometimes they don't.

Apartment LOVE: Lindsey Coral Harper

You know how sometimes you see a re-occurring theme in a home? Well Lindsey Coral Harpers theme is certainly zebras and it's certainly prevalent.

"People often ask me where my obsession began and I don't even remember, that's how far back it goes, back to childhood," says the designer.  "I love that they are each unique!"

They certainly make her home unique, too. Her piece de resistance: her Zebra Rug from Portobello Market.

Roasted Vegetables

Remember when Shelby and I made a meal all from the Farmer's Market?


Well we were craving it again...and this time, we just decided to hit up the grocery store and get as many vegetables we could think of that would taste good roasted.


Yes, it was super pretty and super easy, too.

We got: broccoli, carrots, sweet potato, parsnips, shitake mushrooms, cherry tomatoes, pearl onions and garlic. We cut them all up and tossed them in a big bowl with Olive Oil, Garlic Salt and Pepper. Then we cooked it in the oven at 375 degrees Fahrenheit for an hour. 

Shelby made some pasta to eat hers with and I served it alongside some left over roasted chicken.

And it was soooo good. I think this is going to be a staple that will adapt as the seasons, and vegetables avaialble, change!

Apartment LOVE: Katie del Castillo

When I saw this apartment and read about Katie del Castillo on The EveryGirl, I knew I had to share it for a few reasons:

  1. This girl is a freaking Army Captain.
  2. I love what she credits her inspiration to: Living in Army Barracks with plain mess halls and military uniforms, her brain was starving for some creativity and color
  3. Her story, while gut-wrenching, is so so inspiring
