Paleo Shrimp Scampi


After I reconfirmed myself to Paleo this past weekend, I was ready to make some paleo versions of my favorite foods. So naturally some shrimp was in order. Shrimp Scampi it was.

I kind of winged this one with what I had on hand and decided making a Spaghetti Squash could be a tip in surviving Paleo. 

Paleo Shrimp Scampi 

Ingredients:
Spaghetti Squash
Shrimp, Peeled & Deveined
Spinach
Olive Oil
Garlic
White Wine
Chicken Broth
Lemon Juice
Flour [I know, not paleo]

Directions:
Prepare the spaghetti squash by cutting in half and pulling out all of the seeds. If it's difficult to cut into the spaghetti squash, you can heat it in the microwave. I actually cook this in the microwave by adding water to the bottom of a clear pyrex and microwaving for 10 minutes.

Meanwhile, heat up olive oil and garlic in a pan. Then add chicken broth, lemon juice, white wine. parsley and flour Add the shrimp and cook until pink and cooked through on both sides. Add and cook spinach.

Remove shrimp and spinach and add flour to thicken and make a sauce. Then add spaghetti squash, spinach and shrimp back in to coat.

Season with salt and pepper.
