Paleo Crockpot Honey Ginger Apple Shredded Pork

Another week, another recipe. Ladies and gents, grab your crock pots again.


Please pardon my paper plate, we're not EXACTLY a pork eating apartment. In fact, we're keep it pretty kosher around here, literally.

This dish, however, was yummy and worth the blasphemy of cooking pork in my apartment. And lucky for my roommates, the smell of delicious cinnamon, honey and apples was more reminiscent of the Jewish New Year than your average pig roast.

But, for those pig eaters, I say dive into this dish.



Paleo Honey Ginger Apple Shredded Pork

Ingredients
2 lb pork shoulder roast
1 yellow onion, sliced
2 apples, cored & sliced
2/3 cup chicken broth
1 tbsp raw honey
2 tbsp ginger, freshly grated
1 tsp cinnamon
1 tsp salt
1/2 tsp paprika
1/2 tsp pepper
2 garlic cloves, peeled & smashed
1 bay leaf

Instructions
1. Add all ingredients to crock pot and allow spiced and ingredients to coat roast
2. Cover
3. Cook for 8 - 10 hours on low or 6 - 8 hours on high
4. Using a fork, shred your pork.
5. Enjoy!
