Now, I know that sometimes I knock my mother's cooking but there are some things she makes well, pasta salad, asian broccoli, lemon chicken, tsimmes, chicken soup, reservations, and this apple pie. It's a family favorite, there's NEVER any leftovers. It's perfectly oo-ey goo-ey on the inside and kind of like a sugar cookie meets pie crust topping.
Plus, it's perfect and fitting as today is also the Jewish New Year.
Mom's Easy Apple Pie
5 apples, peeled & sliced
1 tbsp lemon juice
1 can Comstock Apples, the pie filling kind
1 cup and 1 tbsp Sugar
1 tbsp Cinnamon
1 stick Margarine, melted
1 cup Flour
1 beaten Egg
Combine Apples, Lemon Juice, Canned Apples, 1 tbsp sugar and cinnamon. Set aside in a pie dish.
Mix margarine, remaining sugar, flour, and egg. Pour over the apple mixture.
Place pie dish on a cookie sheet with aluminum foil, in case of run over.
Bake for 1 hour at 350 degrees.
[p.s. I should give credit where credits due, since making this recipe, my Nana has informed me that this recipe was in fact my great grandmother, Nana Rose's, recipe, which she got from her friend Beulah but to me, it's mom's]
